Topping-up

Topping-up is an operation aimed to check and preserv the state of conservation of the wine, according to  regulations that include the presence of witnesses.

Topping up is necessary because corks lose their elasticity so can't adhere perfectly to the bottleneck. The level of wine in the bottle diminishes as time goes, so bringing it back to the original level and change the cork of course of course.

The bottle is topped up after a strictly inspection. The wine used for the topping-up is taked from a bottle of Brunello Reserveof Biondi Santi. Any bottles found to be unsuitable are returned to their owners without being topped up, re-corked with unbranded corks and without hoods.
